There’s nothing better than a good cup of tea, great cake and a catch up with friends. Last weekend I decided to make a cake for just this reason and I went for one of my fail-safe cake bakes! This is a family favourite that we all love. It’s light, full of flavour and has chocolate and fruit in it (so that makes it healthy right?).
So, introducing the lemon, blueberry and white chocolate cake…
- 200g caster sugar
- 75g butter
- 2 eggs
- 2 lemons
- 200g plain flour
- 1 teaspoon baking powder
- 150 ml buttermilk
- 80g blueberries
- 80g milky bar white chocolate cut into small chunks
- Icing sugar (for the lemon drizzle)
1. Preheat the oven to 180 and line a baking tin (roughly 25x10cm)
2.Zest both the lemons and squeeze their juice into a separate bowl
3.Melt the butter
4.Mix together the sugar, melted butter, half the lemon juice, eggs and lemon zest
5.In a separate bowl sift the flour and baking powder. Add half of this to the lemon/egg mix and stir well.
6.Fold in the chocolate and blueberries and pour the mix into the tin
7.Bake for about 40 minutes until the top is golden and you can stick a skewer in without the cake mix sticking to it
8.Allow the cake to cool then add some icing sugar to the remaining lemon juice and drizzle over the top
This lemon, blueberry and white chocolate cake is super easy to make and everyone loves it!
